Cúlbhac Farm sits quietly beneath Keeper Hill in Newport, Co. Tipperary—a 100-acre organic farm with over two centuries of family tradition. Run by Ollie and Esther O’Brien and their three kids, the farm is certified organic by the Irish Organic Association. Their signature product, Organic Esther’s Eggs, comes from free-roaming hens that forage naturally across biodiverse pastures, surrounded by fruit trees and hedgerows. These eggs aren’t just fresh—they’re collected by hand and delivered locally, including to shops like Sweeney’s Spar and The Urban Co-Op.

But eggs are just part of the story. Cúlbhac Farm also raises organic Angus beef, fed with raw milk and local grains. The cattle graze using a thoughtful 90-day rotation system, which supports soil health and natural biodiversity. The farm grows heritage Irish apples, blackcurrants, raspberries, and a mix of seasonal vegetables. They’ve fenced off native woodlands to protect wildlife and introduced mobile hen houses and a mobile milker to keep things sustainable. It’s a small operation with a big heart—and deep roots.
