All About Kombucha is a carbon-neutral brewery based in the Gaeltacht region of Galway, Ireland, founded by friends Emmett and Keith in 2017. After discovering kombucha in Canada, they returned home to craft their own unpasteurised, organic brews. Starting from a garden shed, their operation now supplies over 400 stores nationwide, including Dunnes Stores and SuperValu. Their mission blends gut health, sustainability, and community, guided by values like kindness, creativity, and giving back.

The brewery offers a range of kombucha flavours, Raspberry, Ginger & Lemon, and Blueberry & Mint available in cans or through a subscription service. They also provide DIY brewing kits, complete with a SCOBY and organic ingredients, for home enthusiasts. Committed to environmental responsibility, they donate 1% of profits to initiatives like native tree planting in Ireland. What is kombucha?

Kombucha is a naturally fermented tea packed with probiotics and antioxidants. It’s fizzy, refreshing, and great for your gut—like a soft drink, but actually good for you!

What is a SCOBY?

SCOBY stands for "Symbiotic Culture of Bacteria and Yeast." It’s the living culture that ferments tea into kombucha. It might look unusual, but it's essential for brewing booch!

Does kombucha need to be refrigerated?

Absolutely! Our kombucha is raw and unpasteurised, meaning it’s alive. If left out, it keeps fermenting, which can lead to over-carbonation.

Is your kombucha vegan, gluten-free, alcohol-free, and organic?

Yes! It’s vegan, gluten-free, and made with organic ingredients. It contains a tiny trace of alcohol from fermentation (less than 0.5% ABV), so you won’t get tipsy off it.

    I have loved the chilled drinks from All about Kombucha for awhile now especially the refreshing lemon and ginger. I was drinking one recently and came across the ad to make your own at home. I had looked in to it for awhile but had never taken the plunge. The kit makes everything so easy. I am now on my second batch and learning all the time. It is actually very easy paticularly when the kit has everything you need. There was an item that wasnt right with my delivery which happens in every walk of life but I am always keen to see how a company delivers when things do not go quite to plan and can I say the team at AAK met my expectations and above. I got an email back straight away and the replacement item was with me the next day. I would recommend also purchasing extra stop top bottles with the starter kit as you will need them for the second ferment and ensure your funnel fits the top of the bottle. I lost about 400ml to the sink on my first attempt. Fantastic gift for yourself or a friend. Couldn't recommend more highly and always love to support a fantastic home grown Irish business. Keep up the good work 💛

    I have a subscription with a variety of the different flavours and the “limited editions” – I have now tasted all of them, and I can honestly say, they are ALL absolutely delicious. I’ve tried many different Kombucha brands before, but these are by far the best tasting ones. The right amount of fizz (not too fizzy or too flat), the right amount of sweetness (not too sweet but not too sharp), the right amount of taste of the ingredient (not too overpowering or too bland!). This drink should be served in all pubs and bars as a “Non-alcoholic” choice! The 2-weekly subscription is ideal, as there’s now always a kombucha in the house for this extra energy boost or when I’m just fed up drinking plain water. It’s great value and great service.
